For our perfect summer vegetable baguette, we recommend finding the best quality ingredients you can.  This gives the highest nutrient content, and elevates the taste and appearance, ideal for a quick photo before devouring.

We love to draw on the South of France and the beautiful Mediterranean flavours as inspiration, and this was a perfect chance to do so.  That is why we have selected zucchini (aka courgette), capsicum (aka bell peppers) and tomatoes for today’s recipe.

Rather than just jumbling them up and placing in the baguette, take some extra time to marinate and char grill.  The zucchini and capsicum add a smoky sweetness and vibrant colour, perfectly complemented by the juiciness and tang from the tomatoes.

The combination is more than just delicious, it is also visually appealing, a perfect addition to any menu.

Ingredients You'll Need

Vegetables:

  • ½ cup thickly sliced zucchini
  • ½ cup sliced mixed capsicum
  • 16 cherry tomatoes
  • ⅓ cup olive oil
  • ⅓ cup lemon juice
  • ⅓ cup crushed garlic
  • ⅓ cup soy sauce

For each portion:

1 Délifrance half baguette

  • 60g grilled, marinated zucchini (made from the vegetables above)
  • 60g grilled, marinated mixed capsicum (made from the vegetables above)
  • 20g grilled, marinated cherry tomatoes (made from the vegetables above)

Step-by-Step Preparation

  1. Prepare your vegetables, slice zucchini and capsicum and remove stems from tomatoes
  2. Preheat your oven to 190 C
  3. Place tomatoes, zucchini, and capsicum into a large bowl
  4. Mix together olive oil, soy sauce, lemon juice, and garlic in a small bowl. Pour over vegetables, tossing to coat. Cover the bowl and marinate in the refrigerator for 30 minutes
  5. While marinating, place your baguette on a baking sheet in the preheated oven
  6. Bake for 8-10 minutes until your baguette has a nice golden colour
  7. Remove from the oven and allow to cool
  8. Preheat the grill on a medium heat. Lightly oil the grates to assist veges not to stick
  9. Cook marinated vegetables on the preheated grill until tender, 12 to 15 minutes.  Set aside for preparation of baguette
    Chef’s Tip: Try to flip them less often so you get those beautiful char lines
  10. Slice your baguette open lenghtwise
  11. Place the prepared vegetables inside, alternating their order for the best presentation

Chef’s Tip: For different flavour or textures, feel free to add items such as grilled halloumi, your favourite chutney or some fresh herbs.
