  • 1 Délifrance Heritage Butter Croissant
  • 4 - 6 slices of fresh mozzarella
  • A handful of fresh baby spinach leaves
  • ½ ripe avocado, thinly sliced
  • A drizzle of lemon juice (to prevent oxidation of the avocado)
  • A handful of micro sprouts

This recipe can quickly be made vegetarian by swapping the mozzarella for vegan cheese.

Step-by-Step Preparation

1. Croissant (30 minutes)

  • If using Délifrance Heritage Butter Croissant ready to bake, defrost for 15 minutes
  • While it is defrosting, pre-heat oven to 175 degrees Celsius
  • Following defrosting, bake for 13 -15 minutes

2. Preparation (5 minutes)

  • While the croissant is baking;
  • Slice the mozzarella into thin pieces
  • Thinly slice the avocado and drizzle with lemon juice to prevent oxidation
  • Rinse and pat dry the spinach leaves and micro sprouts
  • Once the croissant has finished baking;
  • Slice the croissant in half horizontally

3. Assembly

  • Open the sliced croissant
  • Layer the bottom half with slices of mozzarella
  • Add a layer of fresh spinach leaves on top of the mozzarella
  • Arrange the sliced avocado over the spinach leaves
  • Sprinkle a handful of micro sprouts on top
  • Close the croissant with the top half
  • Serve immediately
